About the Program

The Brewing Technician diploma program trains you for careers in Ontario's booming craft brewery sector and large-scale brewing operations. Over 39 weeks (29 weeks online learning + 10-week brewery internship), you'll master brewing science, fermentation management, quality control, and packaging technologies through distance education that lets you study from your community without relocation.

What You'll Learn

  • 39 weeks blended learning - 29 weeks online instruction + 10-week (300-hour) hands-on internship in real craft or large-scale breweries
  • Brewing science & production - ingredient selection (malt, hops, yeast, water chemistry), mashing, lautering, boiling, fermentation management, cellar practices, packaging (kegging, canning, bottling)
  • Quality control & lab testing - sanitation protocols, CIP systems, gravity/pH/IBU/SRM testing, sensory evaluation, brewery hygiene standards
  • Operations & business - equipment care, draft systems, production planning, inventory, record-keeping, marketing, distribution, regulations, taxes
